Zucchini Lettuce Wraps
1 Cup of chopped red onions
1 Tbs extra virgin olive oil
1 Cup of sliced portabello mushrooms
1/8 Cup of crushed walnuts
10 Medium black olives
2 Cups of zucchini sliced and halved
Pinch of rosemary, thyme and basil
A sprinkle of course ground garlic salt
1 Head of iceburg lettuce
Heat the oil in a pan on the stove on low heat. (don't overdo the olive oil, I promise 1 tbs is enough) Put the walnuts in the pan and let them absorb the oil. Then add the mushrooms and let them sautee about 5 minutes. Add the rest of the ingredients and sautee on low for 10 minutes. Let cool.
Fill lettuce with mixture and enjoy!!
